Cream of Cauliflower Soup with Almond Milk

A vegan and very healthy cream. Perfect for light dinners.

Ingredients

  • 1 medium head of cauliflower
  • 1 onion
  • 2 cloves of garlic
  • 500 ml Borges sugar-free almond drink
  • 1 tablespoon Borges extra virgin olive oil
  • Salt and pepper

Toppings

  • Chopped nuts
  • Grated cheese
  • An extra splash of Borges almond drink

Step by step

  1. Step 1

    Cook the cauliflower florets in a pot with salted water for 10-12 minutes until tender. Drain and set aside.

  2. Step 2

    Heat the olive oil in a pan and sauté the chopped onion and garlic. Add the cauliflower and cook for a few minutes.

  3. Step 3

    Blend the cooked cauliflower, onion and garlic together with the warmed almond drink until smooth and creamy. Season with salt and pepper to taste.

  4. Step 4

    Add your favorite toppings: a handful of chopped nuts, a splash of almond drink or a little grated cheese.
