Pasta with Spinach Pesto

Ingredients
- 350 g Borges penne rigate
- 100 g fresh spinach
- 40 g walnuts
- 1 clove of garlic
- 50 g grated Parmesan cheese
- 80 ml Borges extra virgin olive oil
- ½ lemon
- Salt and pepper
- Extra Parmesan and baby spinach for garnishing
Step by step

Step 1
Cook the pasta in plenty of salted water following the manufacturer’s instructions. Set aside a cup of the cooking water before straining the pasta.

For the pesto, blend the spinach, walnuts, garlic, Parmesan cheese, extra virgin olive oil, and lemon juice in a blender or food processor until smooth. Season with salt and pepper to taste. Add a little of the reserved cooking water if it is too thick.

Mix the warm pasta with the pesto. Add some more of the cooking water if you want a lighter texture.

Top with grated Parmesan cheese and a few baby spinach leaves as a garnish.
