Pasta with Spinach Pesto

If you’re a pasta lover, this recipe will blow your mind. A vegetarian, healthy, and delicious dish.

Ingredients

  • 350 g Borges penne rigate
  • 100 g fresh spinach
  • 40 g walnuts
  • 1 clove of garlic
  • 50 g grated Parmesan cheese
  • 80 ml Borges extra virgin olive oil
  • ½ lemon
  • Salt and pepper
  • Extra Parmesan and baby spinach for garnishing

Step by step

  1. Step 1

    Cook the pasta in plenty of salted water following the manufacturer’s instructions. Set aside a cup of the cooking water before straining the pasta.

  2. Step 2

    For the pesto, blend the spinach, walnuts, garlic, Parmesan cheese, extra virgin olive oil, and lemon juice in a blender or food processor until smooth. Season with salt and pepper to taste. Add a little of the reserved cooking water if it is too thick.

  3. Step 3

    Mix the warm pasta with the pesto. Add some more of the cooking water if you want a lighter texture.

  4. Step 4

    Top with grated Parmesan cheese and a few baby spinach leaves as a garnish.
