Warm Grilled Romaine Salad

Ingredients
- 2 hearts of romaine lettuce
- 1 clove of garlic
- 100 g cooked chickpeas
- 1 avocado
- 100 g feta cheese
- 70 g Borges green pitted olives
- 1 pomegranate (seeds only)
- 50 g toasted walnuts
- 1 teaspoon ground cumin
- 60 ml Borges extra virgin olive oil Character
- 1 tablespoon lemon juice
- Salt and pepper to taste
Step by step

Step 1
Preheat the grill. Slice the romaine hearts in half lengthwise. Brush each half with a little olive oil. Grill them for a few minutes on the cut side until they are golden brown but still crisp. Set them aside.

Heat a tablespoon of oil in a frying pan and lightly brown the garlic. Add the chickpeas and cumin and cook for 4-5 minutes, stirring constantly. Season with salt and pepper and set aside.

Lay out the lettuce halves on a serving plate, as a base. Top with the spiced chickpeas, sliced avocado, crumbled feta, green olives, and pomegranate seeds.

Add the toasted walnuts and dress with the remaining extra virgin olive oil, lemon juice, and salt and pepper to taste. Serve warm or at room temperature.
